Our history

Just a few steps from the famous dyke and right at Puerto Vallarta’s heart, in a typical building is located “Gaby’s”, the Mexican food restaurant with the greatest tradition and the most delicious Mexican flavours in Puerto Vallarta since 1989.

In September 1989, Cristina Pérez and César Castillón decided to run a homemade food business, opening “Gaby’s” starting as a small, family business, serving Mexican food, offering their service to banks (‘s) (employees)

and governmental offices.

Throughout the years and considering   costumer’s needs; in 1994, they decided to explore new concepts and upgraded the project, then came to be pioneers in the homemade food field in Puerto Vallarta. As the restaurant raised more people became costumers, including bankers, aldermen, executives, owners and tourists.

Their success is undeniable. It went through a notable process; started as a backyard’s home business to a famous restaurant; and during the last years, it has become the favourite restaurant for many people.   Motivated by their success, they decided to expand the restaurant, adding more rooms to it. It is been 18 years now since they started to offer dinning service.

In 2010, Julio César, Cristina and César’s junior son leads the business, being 100% committed to quality and costumer service. Its youth has given it a juvenile, personal touch and changes in the menu have been made but still bidding the best of the traditional Mexican food.
